Fresh Homemade Pasta
Homemade pasta is so simple and fun to make. This recipe can be used to make any shaped pasta and in some cases even Asian egg noodles.
2 Cups of All-Purpose Flour
6 Egg Yolks at room temperature
2 Whole Eggs at room temperature
1 Tbs of Olive Oil
A pinch of Salt

Start off by prepping your work surface. You can either use a silicone bakers mat, or a sanitized work surface of your choosing. Once your space is prepped, place your flour and salt on the work surface. Create a well in the middle of the flour and pour in your eggs and olive oil. Using a fork at first, gently start binding your dough from the middle. Once your egg as been combined as much as possible, knead the dough with your hands until you have a soft and fully hydrated dough. The dough will be pretty sticky when you start kneading but will eventually become workable.
Once your dough has been formed, wrap it in cling wrap and let it rest for 30-45 min. Once your dough has rested, you can form it in any shape that you would like. If you have a pasta maker, your dough will easily glide into your machine and form your noodles/pasta for you. If you would like to make your noodles manually, simply roll out your dough as think as possible, and thoroughly flour it on both sides. Once it has been floured, fold it into thirds and with a very sharp knife, cut your dough into strips. You can cut them to any size you would like. Dust them with a bit more flour to prevent them from sticking to each other.
When you are ready to cook your pasta, simply add them to a pot of boiling salted water. Cook them until your pasta floats on top (This wont take more than 3-5 min). Serve them with your favorite pasta sauce or wok fry them in your favorite Asian noodle dishes.
